Paula from Auckland assures me that this is a great way to use up leftovers and introduce veggies to children who are not so keen to make their acquaintance!

Ingredients

Mashed potato
Mixed Vegetables
Grated cheese
Onion, finely chopped
Cold meat (sausage, ham or a little cooked bacon) chopped
Parsley
Chicken Stock, just a sprinkle

Instructions

Mix all the ingredients together, saving a little of the grated cheese, for later.

Lightly grease an oven tray then place dollops of the potato mixture onto it. You might like to use an ice cream scoop to place the mix on the tray or spoon it on making swirls like a soft serve ice cream! Sprinkle a little cheese on each and cook in a moderate oven until golden brown. Cool a little before eating.

Notes

You can use any leftovers or foods that your child enjoys making this an interesting addition to the menu.
