These easy to make Coconut Cakes are one of Hannah's favourites for her school lunch box.

Ingredients:
50g  of butter
1/2 a cup of  sugar
1 egg
1 cup of desiccated coconut
1 cup of cornflakes

Instructions:
Melt the butter in a pot then take the pot off the heat. Add the rest of the ingredients, mixing it all together well.
Put spoonfuls of the mixture onto an oven tray and pat them gently into shape.
Cook for 12 - 15 minutes at 180 degrees Celsius. 

Notes:

These will keep well in an airtight container.
