and Leigh love these double chocolate muffins..
- Ingredients:
1 and 1/4 cups of flour
1/4 cup of cocoa powder
2 teaspoons of baking powder
- 1/2 cup brown sugar
- 2 eggs
- 1/2 cup milk
- 100g butter, melted
- 1 cup chocolate chips
Instructions:
Sift the flour,
cocoa and baking powder into a bowl. Stir
in the brown sugar. In a
separate bowl beat the eggs
and milk together until combined.
Make a well in the centre
of the dry ingredients and
add the butter,
egg mixture and chocolate chips. Mix
to just moisten. Then spoon the mixture into a muffin
tray and bake at 190 degrees Celsius for
20 minutes.
These would be great to take to school in your lunchbox.
