Tania's mum whips up these Noodle Nests or fritters when there's lots of leftovers, hungry mouths and little time to cook.
Ingredients:
cold cooked noodles (e.g. spaghetti)
or vermicelli noodles
cold cooked vegetables (pumpkin/peas/corn/carrot etc)
ham or cold cook chicken 
eggs
salt & pepper
a dash of Sweet Soy sauce

Instructions:
Put the cold cooked ingredients in a bowl or cook the vermicelli noodles as per the packet instructions and add  them to the cold cooked ingredients.

Mix in as many beaten eggs as required to bind the ingredients together.  Mix in the salt and pepper, sweet soy sauce and any other seasonings you choose.

Heat a litte oil in a frying pan and cook spoonfulls fo the mixture as you would corn fritters - until golden brown on both sides.

Notes:
Tania likes to dip these fritters in sauce and sometimes enjoys these, cold,  as part of her lunch.
