family think these Fudge Brownies are Super!
200g dark chocolate, chopped
200g butter, chopped
1 cup caster sugar
1 teaspoon vanilla essence
1 1/3 cups plain flour
1/4 cup cocoa powder
Preheat the oven to 180 degrees Celsius. Brush a shallow 20 by
30cm tin with oil or melted butter. Line the base with baking
paper, extending over the 2 long sides. Melt the chocolate and
butter in a large heatproof bowl over pan of simmering water,
Remove from heat and allow it to cool slightly. Beat the eggs,
sugar and vanilla essence together with a wire whisk until
combined. Add this to the chocolate mixture with the sifted flour
and cocoa. Stir until combined.
Pour into the tin and bake for 45-50 minutes. Allow tocool
completely in the tin; refrigerate for 2-3 hours, until firm. Cut
into small squares.
These can be decorated with icing or melted
chocolate and icing flowers.
