- This is Samantha's favourite salad!
-
- Ingredients:
200g
vegetelli pasta
1 teaspoon of oil
- 2
rashers bacon
- 2 hard
boiled eggs
- 2
small tomatoes
- 3
tablespoons of mayonnaise
- 2
tablespoons of orange juice
1/4 teaspoon of salt
Instructions:
Cook
the vegetelli pasta according to the directions on the packet then
drain it and set it aside to cool in a bowl. Remove the rind from
the bacon and cut it into squares. Fry the bacon in a pan
until it’s cooked and set it aside to cool. Shell the eggs and
cut them into wedges. Cut the tomatoes into wedges.
Mix together the mayonnaise, orange juice and salt then pour it
over the pasta and stir it through. Add the bacon, eggs, and
tomatoes and toss lightly.
Chill the salad before serving it.
Samantha said this is enough for her and her 4 sisters as a meal -
with enough left over for seconds!!!!
